Broiled Salmon

Frugal Family Recipes (featured column)
by Michelle Jones

Although salmon can be an expensive fish to make, it often goes on sale at the grocery store making it quite affordable. This is one way I like to serve it when it does. I hope you enjoy it!

Ingredients:

4 fresh salmon fillets, or amount needed for your family
Lemon juice
Melted butter

Dressing...

1/2 c. light mayonnaise
1 1/2 T. parsley flakes
1/4 tsp. dill weed
1 tsp. milk

Directions:

Mix dressing ingredients together and place in the refrigerator. Drizzle or soak fish with lemon juice and then the butter. Broil for 6-8 minutes on each side (or until fish flakes easily with fork). Remove skin if desired and serve salmon with dressing.
