Potato Pancakes

These tasty potato pancakes can be made with grated or mashed potatoes, and the best part is they cost just pennies to make.

Ingredients:

2 large potatoes
1 small onion
1 egg
1/4 c. flour
1 tsp. chopped parsley
Salt and pepper, to taste

Directions:

Wash, peel and grate potatoes finely (or mash). Chop onion finely and combine all ingredients together. Mix well, and drain any excess liquid.

Spoon potato mixture into pan with hot oil and flatten into the shape of a pancake. Brown lightly on both sides and drain on a paper towel.

Serve warm, with applesauce and/or sour cream on the side.
