Surprise Mexican Soup

I came up with this recipe when I was sent home from work because of an ice storm and thought a good soup would really be good, but didn't have a lot of veggies in the freezer or pantry. I looked at what I had and came up with this, which received a great review from my husband. I call it "surprise" because I was really surprised that it was so good!

Ingredients:

2 cans of chicken broth
3-4 T. garlic, minced
3-4 cans of black beans, drained and washed
1 can of Rotel Tomatoes
1 bag of frozen peas (12 or 16 oz)
1 bag of frozen corn (12 or 16 oz)
3 large chicken breasts or 1/2 bag of frozen fajita chicken, cut into bite-size pieces (you can use leftover cooked chicken or the same equivalent of mixed dark and light meat chicken)
Water to fill deep skillet almost to top

Directions:

Combine all ingredients in skillet.  Cut chicken into pieces and drop into mixture. Add water. Simmer with lid on for at least 30 minutes, then serve with chips or crackers. Sour cream can be dropped on top with sprigs of cilantro if desired.
