Easy Brownie Recipe - Low Fat

Readers' Recipes (featured column)
submitted by Sue Green of Bloomington, Illinois

When I was a single mom with 2 teenage boys, I discovered the local Dollar General Store. They carry a brownie mix that is "snack size" for just $1 per box. Two of these make a nice, large 13"x9" pan of thick, chewy brownies!

I also make them basically fat free, which is how I benefit from the deal!

Ingredients:

2 boxes snack size brownie mix
1 individual container applesauce (equals about 1/2 cup)
2 egg whites
6 T. water

Directions:

Mix all together in a large bowl and spread in pan sprayed with nonstick cooking spray. Bake at 350 degrees for about 28 minutes (depending on your oven) until toothpick comes out clean. Cool completely, then sprinkle with powdered sugar.

Depending on how you cut them, you can get about 16 brownies. For an additional low fat treat, top one warm brownie with 1/2 cup low-fat frozen yogurt and a drizzle of chocolate syrup. To die for!
