Summer Pasta Salad

Readers' Recipes (featured column)
submitted by Blues Fan

Kids love this... it's cheap, filling, and goes a long way! I use various types of pastas, whatever is left in the cabinet or crumbled in the bottom of the box, but you need about 1 pound of whatever you use.

Boil pasta and rinse to cool.  Add 1 bottle of Italian salad dressing (not creamy) and a pinch of garlic powder or minced garlic (about 1 clove freshly minced).

Add in options:

Pepperoni
Salami
Onions
Artichoke hearts (these can be expensive)
Mushrooms
Cherry tomatoes, halved
Colored sweet peppers
Carrots
Zucchini or summer squash( this might need to be semi-cooked)
Mozzarella cheese or other Italian type cheese, such as Romano
Parmesan (fresh grated, not the canister kind like powder)
Black or green olives

Just mix desired ingredients in and eat, or if you prefer it chilled put in the fridge for an hour.
