Twice Baked Mashed Potatoes

This is a good recipe for after the holidays when the leftovers are getting monotonous.

Ingredients:

Leftover mashed potatoes (about 3-4 cups)
Shredded or small chunks of cheese (mozzarella, cheddar or any kind really)
1 T. minced garlic
Salt

Directions:

Take leftover mashed potatoes and mix in grated cheese, garlic and salt. Add extra layer of cheese on top. Bake in oven at 350-375 degrees for about 30 minutes or until bubbly and cheese is all melted. Yummy! One of my family's favorites and it helps to use up those leftovers too. Can be made with instant mashed potatoes as well. Enjoy!
